Ebelskivers!

Last night we broke out another Christmas gift - the ebelskiver pan - from our Fruehan cousins. LOVED IT! Our favorite filling so far is sauer kirsche (sour cherry) jam, which is heavenly! We also tried marshmallow, which was all right; and mint chocolate chips which tasted good but were seriously lacking in aesthetic presentation since they melted all over the pancake and turned it brown and sticky on the outside.

I was going to post some pictures of the ebelskivers as they were cooking. However, when I looked at the enlarged pictures, I realized that I wasn't ready for everyone to see how filthy my stove is. We have a poffertjes pan, but haven't found a recipe we like yet (Pella, IA doesn't give away theirs - rude).
Maybe you could send along the ebelskiver recipe and we could try that. Eh?
